I’ve received a few requests for this recipe.

I made a few alterations.

1) A little less Olive oil,

2) a little more lemon

3) some water for moisture

4) double the garlic. I AM Ukrainian!!!

5) some pine nuts with the walnuts

The #1 most nutrient dense green, by almost 10x above # 2 which is spinach, is DANDELION green. Available these days at most grocers who carry any organic produce. Whole foods and Wegmans definitely do.

Sad that the most abundant poison in our environment, Roundup, was advertised to kill the “weed” which is also the most nutritious plant for us to eat.

From a purely nutritional, human health standpoint, I agree with this article.

A plant-based diet with small amounts of animal products (<10% of total calories) is probably the healthiest overall.

Eat a lot of variety of plants and the cleanest, ethically and sustainably sourced animal products you can.

As investigative journalist Michael Pollan has famously said, “Eat real food, mostly plants, not too much”.

Ethical and environmental concerns are other important issues which everyone should also consider when making daily lifestyle choices.
